Coconut Chickpeas Fried Rice

Ingredients:

2 cups cooked Jasmine rice (preferably chilled or day-old)

 1 can (15 oz) organic chickpeas, drained and rinsed

 1 cup mixed vegetables (peas, carrots, corn)

 1 cup chopped bell peppers (any color)

 1 cup broccoli florets

 1 small onion, finely chopped

 2 cloves garlic, minced

 1 teaspoon ginger, grated

 1 teaspoon onion salt

 1 teaspoon roasted garlic

 4 tablespoons oyster sauce or as season to taste (Panda brand, Oyster Flavor)

 1 cup coconut milk

 1 tablespoon rice vinegar

 2 tablespoons organic virgin coconut oil

 3 tablespoons KRU mild sauce or 5 if you like it extra spicy

 Fresh cilantro for garnish (optional)

 Fried egg and Non Soy Sauce (Optional)

 Lime wedges for serving (optional)

 

Instructions:

Prep Ingredients:

Ensure that the rice is cooked and preferably chilled or day-old.

Chop all vegetables and have them ready.

In a pan, heat 2 tablespoons of coconut oil over medium heat.

Add chopped onions, garlic, and ginger. Add seasonings: 1 tbs roasted garlic, 1 tbs onion salt, 1 tbs.

Smoked paprika, 1 TBS rice vinegar, Sauté until the onions are translucent.

Add chickpeas and cook for about 5 minutes, until they are slightly browned.

 

Vegetable and Chickpea Stir-Fry:

Add mixed vegetables, bell peppers, and broccoli to the pan. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.


Coconut Sauce:

Pour in the coconut milk, and Stir well to combine.

Allow the mixture to simmer for 3-5 minutes, letting the flavors meld.


Fried Rice:
Add the cooked rice to the pan. Gently fold the rice into the vegetable and coconut mixture until everything is well combined.

Add oyster sauce and season with salt to taste. Continue to cook for an additional 5-7 minutes, stirring occasionally.

Garnish with fresh cilantro - finish and serve.
