

Coconut Chickpeas Stew- Vegan
Details
This spicy coconut chickpeas stew is hearty, comforting, delicious, and super easy to make. It’s the perfect meal to up your protein and fiber intake after a good workout.
Ingredients:
2 boxes of organic chickpeas /No salt (134oz 380g)
½ cup water (for less thick sauce, add 1 cup of water)
1 can organic coconut milk
2 tablespoons mild KRU Sauce (For extra heat, replace with 2 tablespoons of hot Kru Sauce)
1 red onion
1 teaspoon sea salt
1 teaspoon Ajika (found at Trader Joes’)
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon fresh garlic
1 teaspoon dried oregano
1 tablespoon organic tomato paste
1 tablespoon coconut oil or vegetable oil
Instructions:
In a large deep pan, heat the coconut oil, fry the onion for 3 minutes, add garlic with all dried ingredients and kru sauce, and continue to cook for another minute while stirring continuously. Add tomato paste, then chickpeas, and fry for 2-3 minutes, stirring occasionally until golden brown.
Add water and coconut milk and allow to boil on medium heat for 3 minutes, lower the heat and simmer, cover for 15 minutes until the sauce thickens.
Add fresh-cut kale and simmer for 3 minutes covered until wilted.
Serve with Rice, Naan, and Roasted potatoes or freshly baked bread and a side salad.
