Jollof Rice

Jollof Rice

Jollof Rice, is a classic West African rice dish flavored with tomatoes, peppers, onions, vegetables, and lots of spices with optional assorted meats or seafood. The preparation methods vary across different African regions.

Ingredients:


2 cups long-grain rice or rice of your choice

1 cup tomato paste

1 onion, diced.

1 red bell pepper, diced.

1 teaspoon thyme

1 teaspoon curry powder

1 teaspoon fresh garlic

1 teaspoon paprika

1 small bag of mixed vegetables

2 vegetable bouillon cubes (non-soy)

¼ cup mild KRU Sauce (for more heat, replace mild for 1 tablespoon Hot/extra or original)

Salt to taste

2 cups vegetable broth (non-soy)

1/4 cup vegetable oil


Instructions:


In a large pot, heat the vegetable oil and add tomato paste, and dried ingredients, sauté the diced onions and red bell peppers until softened.

Wash rice until the water is clear, add rice to the sauté paste, and stir constantly for about 10 minutes on high heat. Add vegetable broth stir and cover with a tight lid, we recommend using foil, then cover with a lid. Allow to cook for 8 minutes, then add mixed vegetables to rice. Cook until the rice is tender and soft. Total cook time 20-25 minutes

Fluff the rice with a fork and serve hot with your choice of protein.
