Liberian Asian Inspired - Salmon Pepper Soup is a flavorful and spicy dish that's popular in Liberian cuisine. Here's a recipe for you:


Ingredients:

1 kg (about 2.2 lbs) of wild-caught Alaskan salmon fish filet), cut into bite-sized pieces

2 red onions, chopped

3-4 cloves of garlic, minced

2-3 inches of ginger, peeled and grated

2- hot peppers (Scotch bonnet or habanero) Keep it whole, (for extra spice flavor)

3-tablespoons of KRU Mild Sauce

1 tablespoon of rice vinegar

1 tablespoon of organic creamy peanut butter 

1 Vegetable Yam or Japanese Yam (Optional)

1 TSB vegetable bouillon-non soy (You can Find it at Whole Foods) 

1 bunch of Bok choy

1 tablespoon ground crayfish (optional) or Fish sauce (You can find it on Amazon)

2-3 tablespoons Avocado oil

2-3 ripe tomatoes, chopped

1 Scallion (Chopped) 

4 cups of non-soy vegetable broth (Trader Joe’s)

Fresh Thai basil for garnish

Season with Paprika, and onion salt.

   

Instructions:

In a large pot, heat the oil over medium heat. Add KRU Sauce, the chopped onions and sauté until they are soft and translucent.

In a separate pot, boil the peeled yams until a fork can go through the yam. Pour the water out and set it aside.

In the large pot, stir in the minced garlic, grated ginger, and chopped hot peppers. Sauté for another 2-3 minutes until fragrant.

Add the fish to the pot and stir well to combine with the aromatics.

Season the fish with ground crayfish (if using), salt, and pepper. Stir to coat the fish evenly with the seasoning.

Pour in the chopped tomatoes. Cook for about 5-7 minutes until the tomatoes are softened and the mixture becomes slightly thickened.

Pour in the broth, enough to cover the meat and vegetables. Add the vegetable bouillon. Bring the soup to a boil, then add the yams, add the peanut butter then reduce the heat to low and let it simmer uncovered for about 30-40 minutes, or until the meat is tender and the flavors have melded together. Add bok choy for your greens or spinach.

Taste and adjust the seasoning if needed. If you prefer a thicker soup, you can mash some of the vegetables with the back of a spoon to thicken the broth.

Once the soup is done, remove it from heat and let it sit for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.

Serve the Liberian pepper soup hot with some rice or crusty bread for a satisfying and comforting meal.
