Lobster Quesadillas with KRU Sauce

The perfect summer appetizer This lobster queso, is a light sharable apps that will get the party started and leave your loved ones with great memories.


Ingredients:


8 small flour tortillas

1 1/2 cups cooked lobster meat, chopped (fresh or frozen and thawed)

1 1/2 cups shredded Monterey Jack or cheddar cheese

1/4 cup diced red bell pepper

1/4 cup diced green bell pepper

1/4 cup diced red onion

2 tablespoons chopped fresh cilantro

1 teaspoon minced garlic

1 tablespoon olive oil or butter

****Use your KRU Sauce as a garnishment on top

Salt to taste

Sour cream, salsa, and lime wedges for serving.

 

Instructions:

In a skillet over medium heat, add olive oil or butter.

Add the diced red and green bell peppers, and red onion. Sauté for a few minutes until they are slightly softened.

Add the minced garlic and chopped lobster meat to the skillet. Cook for another 2-3 minutes until the lobster is heated through and combined with the vegetables. Season with salt and pepper to taste.

Stir in the chopped cilantro and remove the skillet from heat.

Place four tortillas on a clean surface.

Sprinkle a small amount of shredded cheese evenly over each tortilla.

Spoon the lobster and vegetable mixture evenly onto the four tortillas, spreading it out.

Sprinkle more shredded cheese over the lobster mixture on each tortilla.

Top with the remaining four tortillas to create quesadilla sandwiches.

Heat a large skillet or griddle over medium heat. You can lightly grease the surface with a bit of oil or butter.

Carefully place a quesadilla onto the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted and gooey.

Repeat the process for the remaining quesadillas.

Once cooked, remove the quesadillas from the skillet and let them cool, add your KRU Sauce for topping

Slice and Serve the lobster quesadilla slices with sour cream, salsa, and lime wedges on the side.
