Spicy Vegetables Stir-Fry

Dive into the world of flavor with our Spicy Vegetables Stir-Fry, featuring a vibrant mix of noodles, fresh veggies, and a KRU Sauce kick. Quick, colorful, and customizable with your choice of protein, it’s the perfect dish to spice up your meal routine. 


Ingredients:

8 oz (about 225g) of stir-fried noodles (such as rice noodles, udon noodles, or soba noodles)

2 tablespoons of sesame oil

3 cloves of garlic, minced

1 teaspoon onion salt

1 tablespoon chives

1 tablespoon of fresh ginger, grated

1 onion, thinly sliced

1 carrot, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

2 cups of broccoli florets

1 cup of snap peas or snow peas

1 cup of mushrooms, sliced

2 tablespoons of non-soy sauce or (coconut aminos)

1 tablespoon of oyster sauce

1 tablespoon of rice vinegar

1 teaspoon of KRU Sauce (adjust to taste)

1 tablespoon of sesame seeds, for garnish (optional)

Fresh cilantro or green onions, chopped, for garnish (optional)


For added protein option- Add grilled chicken, salmon, or shrimp.

   

Instructions:

Cook the stir-fry noodles according to the package instructions until they are done. Drain and set aside.

In a large wok or skillet, heat the sesame oil over medium-high heat. Add the minced garlic, onion salt, chives, and grated ginger, and stir-fry for about 30 seconds until fragrant.

Add the sliced onion, julienne carrot, and sliced bell peppers to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

Add the broccoli florets, snap peas, and sliced mushrooms to the wok. Continue to stir-fry for another 3-4 minutes until all the vegetables are cooked but still vibrant in color.

In a small bowl, whisk together the coconut aminos, oyster sauce, rice vinegar, and KRU sauce. Pour the sauce mixture over the vegetables in the wok and toss to coat evenly.

Add the cooked stir-fry noodles to the wok and toss everything together until the noodles are well coated with the sauce and heated through.

Taste and adjust the seasoning if needed, adding more coconut aminos or KRU sauce according to your preference.

Once everything is heated through and well combined, remove the wok from the heat.

Transfer the vegetable stir-fry noodles to serving plates or bowls. Garnish with sesame seeds and chopped cilantro or green onions, if desired.

Serve hot and enjoy your delicious and colorful vegetable stir-fry noodles!
