West African Mackerel Gravy

Mackerels are considered some of the most nutritious fish. They're an excellent source of protein, vitamins B2, B3, B6, and B12, and vitamin D. Their flesh is also full of minerals like copper, selenium, and iodine. Some of these fish also contain good amounts of iron and vitamin B1. Ingredients:


2 mackerel fillets, cooked and deboned

2 tablespoons butter or oil

2 tablespoons tomato paste

1 small onion, finely chopped

1 Bell Pepper Chopped

1 Portabella mushroom

2 vegetable cubes

1 garlic clove, minced

1 tablespoon KRU Sauce Mild/Hot/Extra hot ( Your heat preference)

1 cup fish or vegetable broth

1 teaspoon lemon juice

Salt to taste

Chopped fresh parsley (for garnish)


 

Instructions:


Heat the butter or oil in a saucepan over medium heat.

Add tomato paste, stir for 3-5 minutes, then add chopped onion, peppers, mushroom and garlic, KRU Sauce, stir until it becomes translucent 2-3 minutes

Add seasonings to the onions and garlic, stirring to create a roux. Cook for about 1-2 minutes

Gradually pour in the fish or vegetable broth, then add your bouillon cubes to the broth.

Stir and continue to whisk until the mixture thickens, about 3-5 minutes.

Flake the cooked mackerel fillets into the gravy, breaking them into smaller pieces.

Let the gravy simmer gently for another 3-5 minutes to heat the mackerel.

Add the lemon juice and season with salt to taste.

Once the gravy reaches your desired consistency, remove it from the heat.

Serve the mackerel gravy over cooked rice, mashed potatoes, or toast.

Garnish with chopped fresh parsley for added fresh spinach to gravy.
